国境を越えるベジ&ハーブ

先日スペインで行われた料理学会へ向けて
GG FARMのベジ&ハーブが初めて国境を越えました。

サスティナビリティー&ガストロノミーをテーマに
ご活躍されている成澤シェフとスタッフの方々に

収穫されたままの土付ベジ&ハーブを
クーラーボックスに入れて運んで頂き、

現地で冷水につけ、元気を取り戻した後
デモンストレーション&トークにお使いいただきました。

学会では成澤シェフのお料理に参加させて頂いた
GG FARMのことも
太田カメラマンに撮って頂いた写真や
GGサスティナブル農業のコンセプトと共に
ご紹介頂きました。

By one of the definitions of sustainability (out of many), there is a need to sustain economical, ecological and social capitals.

Historically, the garden was an organic place of refugee for all sorts of plants, animals and of course human beings. That was a shelter where rare seeds could be brought and grown and also soil was carefully cultivated in order to make sure that next generations could continue or even improve the viable food production (Economical) on the fragile land (Ecological). The aesthetics of the garden was just as important ornamented flowers, ponds and trees which sparked inspiration in a wide range of artists and brought calmness for disabled people (Social). In one word the garden was the replica of Eden (Bible), the birthplace of peace. Our garden builds on this ancient image.

Researching the taste (another capital)

The garden has to sustain its research and improvements of scents and flavours in the plants. But I have recognized that the flavours in nature are rather different from the gardens`. We cannot get exact idea from nature how we can establish or improve a ‘gourmet’ taste. Therefore we need experimentation in the garden as in a laboratory how scents and flavours can unfold with fortune. Last year for example lemongrass patches were planted in 3 plots of the garden. Originally it grows wild in India in grassland areas, therefore on the full sun. We would think that it, we got best result with the chefs, the highest scented lemongrass which came from the half-shaded and water-rich soil area.

We follow the classical hand cultivation without any noisy machines. Peacefulness cannot be imagined with machines and without birdsongs and moles digging. The soil does not like tractors, because it kills animals like earthworms. With careful hand cultivation the soil regenerates and boasts the ingredients in the plants, which in turn become very delicious.

Good vegetables taste like good wines. There is an overture, main course and finesse, if we have chance to test such a vegetable. This is my aim at GG Farm to achieve this taste wherever possible.
